Heat the oil in a large saucepan over medium heat. Fry the garlic and ginger until aromatic. Add the stock, water and soy sauce and bring to the boil.
Add the prawns and Yum Cha and cook for 4 minutes.
Add the remaining ingredients and cook for 2-3 minutes or until bok choy begins to wilt.
Garnish with spring onion in bowls to serve.
