  • 1 pack (approx. 330g) John West Oven bake

  • Salmon with Tomato, Garlic & Bell Peppers

  • 1 zucchini, thinly sliced

  • 100g cherry tomatoes, halved

  • 3 medium potatoes, peeled and cubed

  • 1 tsp butter

  • 50g parmesan cheese, grated

  • 50ml milk

  • 2 Tbsp Gourmet Garden Mediterranean Seasoning

  • 50g baby spinach

  • Salt & Pepper


  • 1.

    Preheat oven to 180 *C. Remove film from John West Oven Bake Salmon with Tomato, Garlic & Bell Peppers pack. Add zucchini and tomatoes on top of salmon and toss with marinade in tray and bake for 22-25 minutes.

  • 2.

    Meanwhile boil potatoes in salted water for 7-10 minutes or until tender. Remove from heat and drain well. Mash potatoes in bowl with butter, parmesan cheese, milk, Mediterranean Seasoning, salt and pepper.

  • 3.

    Lightly steam baby spinach for 2 minutes.

  • 4.

    Serve salmon on a bed of gourmet mash and baby spinach.
