Greek Lamb Stew

VERY ORIGINAL GREEK LAMB STEW

Ingredients

  • 6 LARGE LAMB SHANKS

  • 6 LARGE ONIONS

  • 6 MEDIUM CARROTS PEELED

  • 4 WHOLE TOMATOS CUT INTO QUARTERS

  • 12 MEDIUM MUSHROOMS WHOLE BUT CLEANED

  • 6 WHOLE MEDIUM POTOTOES PEELED

  • 200 GRAMS FRESH BEENS

  • 500 GRAMS PEELED PUMKIN

  • 1 CUP PARSLEY

  • 1/2 BUNCH CELLERY CHOPPED

  • 2 TABLESPOONS OLIVE OIL

  • 1 LITRE CHICKEN STOCK

  • 1 CAN PEELED TOMATOES

  • 1 WHOLE SWEET POTATO CUT IN QUARTERS

Method

  • 1.

    PLACE OIL IN PAN AND BROWN SHANKS UNTIL FULLY BROWNED

  • 2.

    ADD ONIONS AND COOK TILL SOFT AND SOME COLOUR

  • 3.

    ADD CHICKEN STOCK AND LET SIMMER FOR TEN MINUTES UNTIL STOCK REDUCES A LITTLE.

  • 4.

    ADD ALL OTHER INGREDIANTS AND STIR UNTIL MEAT AND VEGES ARE MIXED

  • 5.

    ADD MORE WATER IF NEEDED TO BRING STOCK LEVEL HALF WAY UP DISH

  • 6.

    COVER WITH ALFOIL THEN PUT LID OVER THE ALFOIL AND COOK AT 180 DEG FOR 4 HOURS.

  • 7.

    THE FOOD SHOULD BE THICKENED BY THIS STAGE AND READY TO SERVE.
