Here is the Simon Says Chicken Burger, available at all Grill’d Healthy Burger Restaurants.


  • 480g butterfly chicken breast (4 x 120g serves), trimmed of all fat

  • 4 lean pieces of bacon

  • 4 fresh wholemeal buns

  • 4 dessert spoons of high quality tomato relish

  • 4 cos lettuce leaves

  • 16 thin slices of spanish onion (4 slices per burger)

  • 4 slices of fresh tomato

  • Avocado Dressing

  • 1 avocado- Cut avocado in half, remove pip, scoop flesh into a bowl and squeeze in lemon. Mush using a fork.

  • Squeeze of lemon

  • Herb Mayonnaise

  • 4 dessert spoons of high quality whole egg mayonnaise

  • 1 tsp dried mixed herbs- Place all these ingredients in a bowl and mix together.

    Cook chicken breasts on a hot grill or BBQ for 3.5 minutes on one side or until circumference becomes white. Turn over and cook for a further 1.5 minutes. Meanwhile cook bacon and lightly toast wholemeal buns under the grill.

  • 2.

    Spread high quality tomato relish to the edge of the bottom side of the bun. Layer cos lettuce, slices of fresh tomato & 4 thin slices of spanish onion on each burger.

  • 3.

    While hot, place chicken and bacon on top of salad. Spread herb mayonnaise on crown of bun to edge.

  • 4.

    Layer avocado on top of herb mayonnaise. Sprinkle with salt and pepper to taste.
