In a large mixing bowl, combine steak, Dijon mustard, cayenne pepper, capers, cornichons, chives, parsley, Tabasco sauce, Worcestershire sauce, salt and pepper. Mix with your hands, until well combined.
Make four even balls and transfer to serving plates. Make a small hole in the middle of each ball with your finger. Crack egg and place in the hole.
To serve, sprinkle with cayenne pepper, chives and baby herbs. Grate a little boiled egg on top and drizzle with olive oil.
