Salmon Fillet with Fresh Sorrel and Spinach Sauce

A delicious seafood dish foryou to try at home!


  • 6 Salmon Fillets

  • 75g (3oz) butter, melted

  • Juice of ½ a lemon

  • 2 level teaspoons plain flour

  • 300ml half fat crème fraiche

  • 1 egg yolk

  • 25g (1oz) sorrel, finely chopped

  • 25g (1oz) spinach, finely chopped

  • Salt and black pepper


  • 1.

    Measure all the ingredients except the sorrel and spinach into a processor or blender.

  • 2.

    Whiz until smooth and season with salt and pepper, whiz once more.

  • 3.

    Pour into a bowl and sit the bowl over a pan of water over a low heat until barely simmering.

  • 4.

    Briskly whisk for about 10 minutes until thicken and fluffy.

  • 5.

    Add the sorrel and spinach and gently heat for a few minutes.

  • 6.

    Check seasoning and serve hot.
