Ginger Caramel Frosting

A tasty treat for you to try at home.

Ingredients

  • 65g butter

  • 100g brown sugar

  • 40ml cream

  • ½ TBSP ground ginger

  • 250g icing sugar

  • Chocolate Frosting

  • 125g soft unsalted butter

  • 250g icing sugar

  • 1/3 cup cocoa

  • 62ml milk

  • 1tsp vanilla

  • Ginger Caramel Frosting

  • 65g butter

  • 100g brown sugar

  • 40ml cream

  • ½ TBSP ground ginger

  • 250g icing sugar

  • Cream Cheese Frosting

  • 225g cream cheese (room temp)

  • 100g unsalted butter

  • 450g icing sugar

  • 1-1½ tbsp milk

  • 1/2 tsp vanilla

Method

  • 1.

    Sift together flour, baking soda, baking powder and salt.

  • 2.

    In a separate bowl whisk together hot water and cocoa into a smooth paste. Add cold water and whisk until combined.

  • 3.

    Cream butter for 1 minute, add caster sugar and one egg. Beat until light. Add other egg and beat then stir in vanilla.

  • 4.

    Add ½ the flour to creamed mixture and beat on low until combined.

  • 5.

    Add ½ cocoa mix and beat.

  • 6.

    Repeat with remaining flour and cocoa but don’t over beat.

  • 7.

    Half fill cupcake papers.

  • 8.

    Bake for 25mins at 170c or until springy.

  • 9.

    Cool in tin for 5 mins before removing to wire cooling rack.

  • Chocolate Frosting:

  • 1.

    Beat butter until light.

  • 2.

    Add ½ icing sugar, ½ cocoa and ½ milk.

  • 3.

    Beat until fluffy.

  • 4.

    Scrape down bowl and add remaining ingredients including vanilla.

  • 5.

    Beat again until light and smooth.

  • 6.

    If frosting is too stiff add a little milk.

  • Ginger Caramel Frosting:

  • 1.

    Melt butter in small saucepan.

  • 2.

    Add brown sugar and stir over low heat until sugar dissolves.

  • 3.

    Bring mix to the boil, reduce heat and cook for 2-3 mins.

  • 4.

    Stir in the cream and ginger.

  • 5.

    Cool to luke warm.

  • 6.

    Gradually stir in icing sugar and cool mix completely.

  • 7.

    Beat until light and creamy.

  • 8.

    If frosting is too stiff, add a little cream.

  • Cream Cheese Frosting:

  • 1.

    Combine cream cheese and butter in a bowl and beat in a table top mixer until light and fluffy (about 3 mins).

  • 2.

    Gradually add icing sugar and 1TBSP of the milk and beat until smooth.

  • 3.

    Add vanilla and remaining milk if mix is too thick.
