Clams Pink Peppercorns, Chilli Maple Syrup Bacon, Grissini, Tomato Vodka

Brought to you from the Good Food and Wine Festival 2012.


  • 24 Clams Open

  • Tablespoon pink peppercorns ( in brine )

  • Bacon

  • Maple Syrup

  • 12 grissini

  • Grissini

  • 500g flour

  • 10g sugar

  • 7g salt

  • 10g butter

  • 15g olive oil

  • 320g water

  • 12g yeast

  • Tomato Water

  • 2 cloves garlic, chopped

  • 400g red, green and yellow peppers, deseeded and diced

  • 1kg tomatoes

  • 2 long red chilli

  • 300g cucumber, peeled and diced

  • 500ml tomato juice

  • Juice half a lemon


  • Grissini:

  • 1.

    Mix flour, sugar, salt, butter and yeast adding lukewarm water slowly for 5min.

  • 2.

    Add olive oil and knead 2min.

  • 3.

    Shape and prove 5min grind over a little black pepper & light oil and rock salt on top.

  • 4.

    Bake 160c 20 min or until golden brown and hard.

  • Tomato Water:

  • 1.

    Blend everything together and place in a jelly bag and leave in a cold room to drip into a bucket over night , the water will be clear and taste of gazpachio

  • 2.

    Grill the Streaky bacon well on both sides, when hot pour over the maple syrup and bake for 3 minutes.

  • 3.

    Open the Clams by splitting with a knife and then mix the peppercorns with the olive oil and lemon juice and maybe a little chopped tarragon, Lay on to a plate and spoon over the marinade.

  • 4.

    Add a splash of frozen Vodka to the tomato water and serve with the bacon and the grissini
