This is a really old recipe and the original dates back to World War I. I have tweeked it a little to make it more interesting.

Ingredients

  • 1.5 cups rolled oats

  • 1 cup coconut

  • 1 cup self raising flour

  • 1 egg

  • .5 cup chopped peanuts

  • 1 heaped teaspoon Bicarbonate Soda

  • 1 cup sugar

  • 125g butter

  • 1 dessertspoon Golden Syrup

  • To make this a little different I often add .75 to 1 cup of raw museli and reduce the rolled oats content by .5 of a cup.

Method

  • 1.

    Place all the ingredients in a large bowl and knead together for 5 minutes. Break off into small pieces form into balls and then press flat with the back of fork. Bake in a moderate oven about 180 degrees for 20 to 25 minutes or until golden brown.

Notes

Other nut varieties can be substituted eg almonds, cashews or macadamias but the most common is peanuts. It's great for getting kids involved in the kitchen.
