Team this salsa recipe with bruschetta for the perfect summer starter,


  • sliced day old bread

  • 2 tablespoons butter melted

  • 1 fillet smoked trout, flaked

  • 1/4 cup egg mayonnaise

  • 1/2 cup grated granny smith apple

  • 1 small avocado, finely diced

  • 2 Roma tomatoes, seeded, finely diced

  • 1/2 cup finely chopped Ocean Spray® Craisins® dried cranberries

  • 1 small red onion, finely chopped

  • 2 tablespoons Ocean Spray® Jellied Cranberry Sauce


  • 1.

    Preheat oven to 180c.

  • 2.

    Cut bread into 4cm rounds, brush with butter and bake until golden. Lightly combine trout, mayonnaise, apple and celery. For the salsa combine avocado, tomato, Craisins®, onion and sauce. Place a teaspoonful of trout mixture on top of bread round and top with salsa.
