Submerge royal blue potatoes in boiling water until soft then strain potatoes and mash them until soft , add butter and cream to form a smooth texture then add sea salt for seasoning
Grill sirloin to your liking then in a pan, sauté the WA prawns and Moretan Bay Bug with olive oil and a tablespoon of butter, 1 tablespoon garlic, season with sea salt and a pinch of crack pepper . Deglaze the pan with white wine and add cream.
To serve simply place mash in the middle of the plate then add the steak on top as well with the seafood and top with garlic sauce.
