Cut the chicken into bite size pieces
Heat a clay pot on high heat and add the sesame oil
Add ginger and garlic and stir-fry until aromatic
Add in chicken pieces and stir-fry for 2 minutes
Add soy sauce, dark soy sauce and the Chinese wine and continue to stir-fry
For 1 minute
Cover the pot, lower the heat and allow to simmer until the chicken is tender
Add basil leaves and serve immediately
