Taiwan_Style Three-Cups Chicken in Hot Pot

  • 500g chicken breast (or chicken drumsticks)

  • 6 pieces of thinly sliced ginger

  • 6 cloves of garlic, peeled

  • 2 tablespoons of sesame oil

  • 2 tablespoons of soy sauce

  • 2 tablespoons shaoxing wine (or any Chinese white wine)

  • 2 tablespoons of dark soy sauce

  • 20 pieces of basil leaves


  • 1.

    Cut the chicken into bite size pieces

  • 2.

    Heat a clay pot on high heat and add the sesame oil

  • 3.

    Add ginger and garlic and stir-fry until aromatic

  • 4.

    Add in chicken pieces and stir-fry for 2 minutes

  • 5.

    Add soy sauce, dark soy sauce and the Chinese wine and continue to stir-fry

  • 6.

    For 1 minute

  • 7.

    Cover the pot, lower the heat and allow to simmer until the chicken is tender

  • 8.

    Add basil leaves and serve immediately
