  • 320g dry organic green tea soba noodle

  • 80g Daikon(julienne)

  • 5g Nori seaweed(julienne)

  • 12pc cherry tomato

  • 20g lettuce

  • soba salad sauce

  • 800ml cold vegetable stock (preferbly dried shiitake mushroom and konbu stock)

  • 100ml mirin

  • 100ml light soy

  • 20ml sesame oil

  • 1tsp grated ginger

  • 1pinch sea salt


  • 1.

    Boil soba(follow instractions) wash sliminess with runnning water.

  • 2.

    Drain water well.

  • 3.

    Put soba into soba salad sauec, mix well.

  • 4.

    On the serving plates, place lettuce put soba on lettuce.

  • 5.

    Top with daikon and nori. serve with cherry tomato.
