Banana Cake with Cream Cheese Frosting

  • 85gr Soft butter

  • 115gr Caster sugar

  • 2 Eggs

  • 220gr Plain flour

  • 4gr Baking powder

  • 2gr Salt

  • 1gr Bicarb of soda

  • 225gr Mashed ripe bananas

  • A tsp of vanilla essence

  • 85gr Broken walnuts

  • You will need a cake tin 22 x 12 x 10cm

  • For the topping:

  • 200g cream cheese

  • 150g icing sugar

  • 100g butter, softened


  • 1.

    Cream together the butter and the sugar add the eggs gradually and cream well, add the vanilla.

  • 2.

    Sieve the flour, salt, soda and baking powder together.

  • 3.

    Mash the ripe bananas and add alternately the bananas and flour to the creamed butter, sugar and egg mixture.

  • 4.

    Stir in the walnuts and pour into a well greased baking tin and bake at 45 minutes at 160Âșc once baked, cool on rack.

  • 5.

    For the topping: beat the cream cheese, sugar and butter together in a mixing bowl until smooth and soft. Spread the frosting over the cooled cake.

  • 6.

    Best left for a day before serving.
