Vache Qui Rit Soup


  • 1 finely sliced Onion

  • 1 kg chopped Zucchini

  • Salt

  • Pepper

  • Cumin optional

  • 500 ml water or chicken stock

  • 3 to 4 triangles VÂCHE QUI RIT or boursin or cream cheese


  • 1.

    Put the onion and zucchini in a pot and pour the water over. (The water will not cover the vegetables.)

  • 2.

    Season with salt and pepper, add the cumin, cover, and cook until soft, about 15 minutes.

  • 3.

    Add the cheese and purée (along with any fresh herbs such as mint, chervil or dill, if you want them).

  • 4.

    Gently reheat to serve.
