Salmon With Warm Tomato Basil Oil

This delicate warm dish is really simple and perfect for an impromptu weeknight dinner gathering.


  • salmon

  • 6 x 140g each Salmon Fillets or 1 large filet

  • Salt

  • Pepper

  • Olive Oil

  • dressing

  • 0.5 cup Extra Virgin Olive Oil

  • 1 Tomato seeded and finely diced

  • 1 handful shredded basil leaf

  • Salt

  • Pepper


  • salmon:

  • 1.

    Heat the oven to 325°F/160°C.

  • 2.

    Pat the salmon dry with paper towel, and season with salt and pepper.

  • 3.

    Put the fish on a baking sheet and bake until cooked through, about 15 minutes.

  • dressing:

  • 1.

    Meanwhile, warm the olive oil in a saucepan.

  • 2.

    Take it from the heat and stir in the tomato and basil.

  • 3.

    Season with salt and pepper.

  • To serve:

  • 1.

    Take the fish from the oven and shift it onto a serving platter.

  • 2.

    Spoon the warm tomato basil oil over.

  • 3.

First I thought, "oil as sauce? on top of an oily fish like salmon? Nooo!". But the recipe was so simple, so I tried, and it was very good! Tomatoes and basil makes this dish so fresh. I cook this regularly especially in summer.

Me 2,sounds easy and yummy,anything that has tomato and basil in it tastes great. Iam itlain and tomato and basil and ol makes a great salad, served with crusty italian bread, have had it all my life,nothing beats it.
