Sticky and Spicy Pork Ribs

These hot and spicy pork ribs by Justine Schofield are great for sharing.

Ingredients

  • 1.5kilos of pork ribs

  • 1 small onion, grated

  • 4 cloves Garlic, crushed

  • 2 tsp Smoked paprika

  • 2 tsp Chinese five spice

  • 1 tsp cayenne powder

  • 1 tsp cumin

  • 2 tbs brown sugar

  • 1 tbs salt

  • ½ cup malted vinegar

  • 1 tbs tomato paste

  • 2 tbs HP sauce

  • 1 tbs Dijon mustard

  • 2 sprigs oregano

  • Good pinch of salt

  • Zest and juice of 2 limes

  • 2 cups of water

Method

  • 1.

    Combine all ingredients into a bowl except for water, add pork ribs and massage well. Wrap tightly with cling wrap and allow to marinade for 24hrs.

  • 2.

    With clean hands, wipe off the excess marinade mixture from the ribs (reserve for later) and BBQ on high heat for 3-4 minutes on each side to get some colour and a charcoal grill pattern occurring.

  • 3.

    Place grilled ribs in a baking tray and add half the reserved marinade, add a cup of water massaging again. Cover tightly with foil and cook for 1 ½ -2hours until nice and soft at 185? C or until they fall apart. Half way through cooking, they may need another ½ cup of water. Turn 3 or 4 times during the cooking process.
