George’s Olive Oil Chocolate Mousse with Fresh Berries

George Calombaris rustles up a delicious chocolate mousse in episode 31 of Everyday Gourmet, serve in a pretty glass topped with fresh berries and biscotti.

Ingredients

  • 100ml extra virgin olive oil

  • 150g good quality dark cooking chocolate

  • 250g pouring cream

  • 1 punnet raspberries

  • 1 punnet blueberries

  • 1 punnet strawberries

  • Biscotti (optional)

Method

  • 1.

    Gently melt the chocolate in a bowl standing over a pot of simmering water.

  • 2.

    Stir in the olive oil.

  • 3.

    Whip the cream to soft peaks and then add to the melted chocolate and olive oil.

  • 4.

    Place in a pretty glass topped with fresh berries and biscotti.
