Rustle up this fresh and vibrant vegetarian pasta dish for a great dinner any night of the week.


  • 2 medium sweet potatoes, peeled, chopped

  • 2 red onions, cut into wedges

  • 2 tbsp olive oil

  • 400g Coles Roma Tomatoes, quartered lengthways

  • 500g penne

  • 50g baby rocket

  • 1/2 cup grated parmesan


  • 1.

    Preheat oven to 200°C or 180°C fan. Place sweet potatoes, onions and 1 tbsp oil in a baking pan.

  • 2.

    Toss to coat. Bake for 30 mins, or until tender. Add tomatoes and bake for 10 mins, or until tomatoes have just collapsed.

  • 3.

    Meanwhile, cook penne in a pan of boiling, salted water according to packet directions. Drain.

  • 4.

    Place pasta in a large bowl with remaining oil. Add vegetables, rocket and parmesan. Toss well to combine. Serve.
