These decadent, easy-to-make truffles are full of Christmas flavour. Made with crumbled fruitcake, they’re an ideal festive treat to serve to guests after dinner with coffee, or for a celebratory morning tea.
Preheat oven to 180ºC or 160ºC fan. Spread almonds on an oven tray and cook for 3-4 mins, or until golden. Cool, then finely chop.
Use your fingers to crumble fruitcake into a bowl. Add almonds and chocolate, and mix until evenly combined.
Roll level tablespoons of mixture into balls. Roll balls in cocoa powder and refrigerate for 30 mins, or until firm.
