This recipe makes it very easy to put a great meal on the table using mostly pre-prepared ingredients from the supermarket.


  • 4kg Coles Finest Hunter Valley Free Range Whole FreshTurkey

  • 50g butter, at room temperature

  • 2 lemons, 1 quartered, zest grated, and juice of 1

  • 6 clovesgarlic, 4 halved, 2 chopped

  • ½ cup parsley sprigs, plus ¼ cup chopped

  • ¼ cup olive oil

  • 1 onion, finely chopped

  • 2 cups fresh breadcrumbs

  • ½ cup dried cranberries (craisins)

  • 2 tbsp pine nuts, toasted

  • 1 tbsp chopped thyme leaves

  • PLUS bay leaves (or fresh parsley sprigs) and thyme, to garnish

  • Coles Brand Traditional Instant Gravy, to serve
