Thai style deep fried eggs
Hard boil 2 eggs, run under cold water and deshell.
Heat vegetable oil up to about 170 degtrees and after drying off the eggs, deep fry for 2 minutes.
Cut the eggs in half and put aside. Thinly slice a clove of garlic and a small shalot and deep fry until crispy (about 1 minute) cover the eggs with Thai sweet chiili sauce and the garlic & shalots, garnish with coriander.
Make sure the eggs are dry before you fry them and you can use home made Thai sweet chiili sauce.
