Sugary delight. Inspired by Fantales
Preheat oven to 160*C. Place patty pans in muffin tin.
Sift all dry ingredients into mixing bowl.
Make a well in the centre of the mixture.
Add all remaining ingredients and mix with an electric mixture until just combined.
Scrape down the sides of the bowl and continue mixing for 2 minutes of medium speed.
TASTE the mixture and add additional ingredients according to taste
Place mixture in patty pans and cook for 15-18 minutes in oven.
Melt the colombines in the microwave in a microwave proof bowl, mix immediately (make sure you dont let them harden).
Add some cream to the melted caramels and stir vigorously, then place back in microwave.
Melt for another 20 seconds and continue mixing until the cream has turned caramelly and just have a taste :D
Make a hole in the centre of your cupcakes and fill with creamy caramel mixture. It may not apprear filled because the mixture soaks up the caramel.
Add icing sugar, butter, vanilla essence and cocoa and beat through until all mixed.
Taste and add ingredients accordingly
Pipe or spread onto cakes and add caramely to icing if desired. :D
