Lamb with a Chamoula Rub Served on Smash Chats and Wilted Greens

Looking for a lamb dish for your next dinner party? Try this recipe by Andrea Anagnostopoulos from series 3 of Mercurio's Menu.

Ingredients

  • 6 lamb cutlets

  • 6 chat potatoes

  • 2 x handful rocket lettuce

  • Fresh ingredients

  • Fresh ingredients

  • 4 springs parsley

  • 4 sprigs coriander

  • 1 clove garlic

  • 1 red capsicum

  • 1 small red chilli

  • Powdered ingredients

  • ½ teaspoon coriander

  • 1 teaspoon paprika

  • 2 teaspoon cumin

  • 1 teaspoon Cajun spices

  • Chamoula rub

  • 40 grams harissa paste

  • 1 cup vegetable oil

  • 1 teaspoon lemon juice

  • 1 fresh squeezed lime

Method

  • 1.

    Roughly cut fresh ingredients

  • 2.

    Blend in the robo coup and add together when all ingredients have been blended

  • 3.

    Coat lamb in the Chamoula rub. Cook potatoes in oven at 180 degrees Celsius till soft.

  • 4.

    Once chats are cooked, cook lamb in grill for three minutes each side of lamb cutlet.

  • 5.

    Place greens in boiling water for 30 seconds.

  • 6.

    Semi squash the chats and plate up with garnish and fresh rosemary.
