Enjoy this crispy fish dish with a good cold beer!


  • 10 whole garfish – filleted and deboned

  • ½ cup of rice flour

  • ¼ tsp of cumin powder

  • ¼ tsp of smokey paprika

  • ¼ tsp lemon pepper

  • ¼ tsp salt

  • 1/8 tsp cracked black pepper


  • 1.

    Put the flour in a large bowl.

  • 2.

    Season the flour with all of the spices, salt and pepper and mix through the flour well.

  • 3.

    Throw the Garfish fillets into the flour and toss so as to coat the fillets evenly – dust off excess.

  • 4.

    Deep fry in hot oil until golden and crisp and then let drain.

  • 5.

    Stack on a plate and serve with chili mayo – ½ cup of good mayonnaise with 1 tsp of good hot chili paste added and stirred through till mixed evenly.
