Rock flathead with preserved lemon chermoula

Looking for a tasty fish dish? Try this flathead recipe from series 3 or Mercurio's Menu.

Ingredients

  • 8 fillets of Rock Flathead (80 to 100gm fillets)

  • 1/4 tsp cumin seeds

  • 3 red shallots, finely chopped

  • 1 clove of garlic (minced)

  • 2 tblsp chopped parsley

  • 2 1/2 tblsp chopped mint

  • 2 1/2 tblsp chopped coriander

  • 1/2 birds eye chili (deseeded & finely chopped)

  • 1/4 tsp freshly cracked black pepper

  • 1/4 preserved lemon, finely chopped

  • 1/4 cup extra virgin olive oil

Method

  • 1.

    Combine all chermoula ingredients until well mixed.

  • 2.

    Pre heat oven to 180 degrees C

  • 3.

    Grease tray and lay fillets skin side down

  • 4.

    Season fish and spread chermoula evenly over fillets and bake for around 10 minutes until cooked.

  • 5.

    Serve with green salad
