Enjoy this cherry dessert with your favourite ice cream, yoghurt or whipped cream!


  • 600g of pitted fresh Morello cherries

  • ¼ cup/40g of self raising flour

  • ¼ cup/40g of almond meal

  • ½ cup of brown sugar

  • Pinch of salt

  • 450 ml of milk

  • 150ml of cream

  • 4 eggs

  • 2 egg yolks

  • Zest of one lemon

  • Zest from one orange

  • 1tbls Port

  • 50g Melted butter


  • 1.

    Sift the flour, sugar and salt together then add and mix through the almond meal.

  • 2.

    In a separate bowl whisk the eggs, egg yolk, milk, cream and port together.

  • 3.

    Gradually incorporate the flour mix into the milk whisking all the time until you finally have a smooth liquid batter.

  • 4.

    Set this aside while you pit the cherries.

  • 5.

    Once the cherries are pitted butter an oven proof dish and scatter them around the dish – the bottom should be completely covered.

  • 6.

    Whisk the melted butter and the lemon and orange zests into the batter and carefully pour the mixture over the cherries.

  • 7.

    Place the dish into a preheated oven and cook at 170° for about 50 minutes.

  • 8.

    The Clafouti should be firmish to touch and browned on the top, it should also wobble in a firm way.

  • 9.

    Serve with good ice cream, yoghurt or some whipped cream.
