This is a really easy salad using Luv-A-Duck Pre-Roasted Smoked Duck Breast or Roast Duck Breast.
Slice the pre-cooked duck breast.
Finely slice the baguette and toast for croutons.
Trim, wash and chop the lettuce and drain well.
To make the dressing:
In a bowl, whisk the egg yolks and mustard together.
Slowly add the oil whisking all the time.
Once the dressing becomes thick, start adding in some of the white wine vinegar.
Once all the oil and vinegar have been mixed in, add the garlic & anchovies and season to taste.
Toss the lettuce with a little of the dressing and arrange it in a serving bowl.
Add the duck slices on top and arrange the croutons.
Sprinkle on the grated parmesan, the chives and drizzle over the rest of the dressing.
