Pre-boil potatoes till cooked through, allow to cool, and then slice into 1cm pieces.
Using a non-stick pan fry onion till lightly browned, then add the potato slices.
Cover potatoes with 1 cm slabs of Munster cheese.
Cook till the cheese has melted and formed a crust on the pan.
Serve with crusty bread and a glass or two of Gewürztraminer or your favourite wine.
