A tasty dish that looks and tastes delicious!


  • 6 x Fresh black figs - peeled

  • 50g whole almonds

  • 1Tblsp Icing sugar

  • 25g fresh goats curd

  • 2 small red apples

  • 200mls sugar syrup 1:1

  • Almond oil

  • Nasturtiums

  • Borage flowers

  • Baby cress


  • Roasting almond:

  • 1.

    Place almonds on a baking tray, dry bake for 5 minutes at 180c.

  • 2.

    While still hot, dust with icing sugar and place back in oven for 5 more minutes until almonds caramelize. Cool.

  • Apple chips:

  • 1.

    Bring sugar syrup to the boil, slice apples with a mandolin as thin as possible, place sliced apple into boiling syrup, cook for 1-2 minutes.

  • 2.

    Remove and spread them on to baking paper.

  • 3.

    Cook in over at 110c for about 1 hour.

  • 4.

    Remove, cool. They should be crisp.

  • To make salad:

  • 1.

    Peel figs and cut into quarters.

  • 2.

    Arrange them to a plate with small quenelles of fresh goat’s curd.

  • 3.

    Sprinkle with sugared almonds, cress flowers and naturtiums.

  • 4.

    Place a few apple chips on to, this is for taste and texture.

  • 5.

    Drizzle with the almond oil
