Blueberry, Local Fig & Bellarine Estate Late Harvest Riesling Salsa

Enjoy this delicious full-flavoured salsa, an ideal companion to barbecued whiting.


  • 250gms fresh blueberries

  • 2 whole figs (diced the same size as the blueberries)

  • 150ml Bellarine Estate Late Harvest Riesling

  • 150gms caster sugar


  • 1.

    Place all the items in a pot and place over medium heat (stirring occasionally) until the juices of the fruits and the sugars start to reduce and thicken .

  • 2.

    Once the fruit appears to be coated by the syrup set aside and serve cool with whiting.

  • 3.

    Served as an accompaniment to approximately 750grams of barbecued whiting.
