A healthy snack idea by Robyn and Henry Wilner from series 2 of Mercurio's Menu.


  • 3 Medium avocadoes

  • ½ cup chopped red capsicum

  • ½ cup chopped red onion

  • ½ cup chopped rind-less bacon

  • ½ cup grated parmesan cheese


  • 1.

    Grill bacon and place on a paper towel

  • 2.

    Sautee capsicum and red onion with a drizzle of avocado oil

  • 3.

    Cut avocadoes in half and remove the seed

  • 4.

    Spoon capsicum, onion, and bacon into avocado halves and top with parmesan cheese.

  • 5.

    Place under grill for approximately 2 minutes or until cheese melts

  • 6.

    Sprinkle with cracked pepper & serve
