Enjoy this mouth-watering prawn recipe for a sumptuous seafood dish.
Pre heat oil in a large pan (or 2 pans) just till it starts to smoke
Lay prawns in pan flesh side down and cook for 3 minutes or until golden brown
Then turn prawns over on to shell side and add white wine, garlic, and chilli and reduce for 3 minutes
Add butter, chopped tarragon leaf and lemon juice (to taste)
Taste for seasoning, and add salt and pepper to taste
Serve 6 halves of prawn, flesh side up, in each dish, pour reduced sauce over the top
Tip: Serve with thick char-grilled slices of sourdough – great to mop up the sauce!
