Pan Fried King Prawns with Chilli, Garlic and Tarragon Butter

Enjoy this mouth-watering prawn recipe for a sumptuous seafood dish.


  • 12 x Size U6 King Prawns cut in half lengthwise, head to tail. Wash out insides. (Tip: see if your fishmonger will do the preparation for you)

  • 2 tbsp olive oil

  • 250ml dry white wine

  • 3 tbsp chopped garlic

  • A pinch or more of dried chilli flakes (vary according to the amount of heat you like)

  • 100 g butter

  • ½ bunch of tarragon leaves (chopped)

  • Juice of 1 – 2 lemons

  • Salt and pepper


  • 1.

    Pre heat oil in a large pan (or 2 pans) just till it starts to smoke

  • 2.

    Lay prawns in pan flesh side down and cook for 3 minutes or until golden brown

  • 3.

    Then turn prawns over on to shell side and add white wine, garlic, and chilli and reduce for 3 minutes

  • 4.

    Add butter, chopped tarragon leaf and lemon juice (to taste)

  • 5.

    Taste for seasoning, and add salt and pepper to taste

  • 6.

    Serve 6 halves of prawn, flesh side up, in each dish, pour reduced sauce over the top


Tip: Serve with thick char-grilled slices of sourdough – great to mop up the sauce!
