Place smoking box on BBQ plate (hottest part), rub chilli paste over Salmon fillet and then place on shelf in BBQ
Peel garlic cloves keep whole drizzle with oil place on BBQ, Roughly chop up Eggplant leave on the skin for colour & texture.
Once the Eggplant and Garlic is cooked 15 minutes on a hot grill add salt & pepper.
VEGETABLES AND ROCKET LEAVES:
Julienne the capsicum and sweet potatoes. Slice new potatoes thinly. Slice Zucchinis and add oil to the Vegetables and then place on the BBQ. Potatoes will take 10-12 minutes so place them on the grill first. The rest of the vegetables will only require 5 minutes.
Mix vegetables through Rocket - the oil on the vegetables will give a deep green shine to the rocket. Add extra salt & pepper to taste.
Place a large tablespoon of Vegetable & Rocket in the middle of a plate, place a piece of salmon on top (almost on it's side), then add another tablespoon of Vegetable & Rocket followed by another piece of salmon on it's side of the Vegetable & Rocket.
