Malva pudding

An delicious malva pudding.


  • 200gm sugar

  • 2 eggs

  • 15ml apricot jam

  • 150gm flour

  • 5ml bicarb soda

  • pinch of salt

  • 15gm butter

  • 1 tsp vinegar

  • 100ml milk

  • Sauce:

  • 200ml cream

  • 100gm butter

  • 150gm sugar

  • 100ml hot water


  • 1.

    Beat the eggs and sugar together well. Add jam.

  • 2.

    Sieve the dry ingredients into a separate bowl.

  • 3.

    Melt the butter and add the vinegar.

  • 4.

    Add this and the flour mixture to the eggs and sugar alternately.

  • 5.

    Beat well and bake covered at 190C for 45 minutes.

  • 6.

    Boil sauce ingredients together and pour over pudding.


Serve with Ice cream, custard, cream or all three!
