Warm grilled fennel slices topped with thinly sliced orange, white balsamic vinegar and finely chopped chives.


  • 1 Fennel bulb

  • 1 Orange

  • 1 Bunch Chives

  • White Balsamic Vinegar

  • Olive Oil

  • Salt

  • Pepper

    Start with putting on grill pan on a medium heat. Take your fennel and trim the top until your just left with the bulb and cut into thin slices. Once cut place into a bowl and toss with olive oil, salt and pepper then place on grill to caramelise on each side. While fennel is cooking peel your orange and make sure there is no white pith left on your orange, Once peeled slice thinly into even rounds, Then take your bunch of chives and finely chop ready for garnish. Once fennel has caramelised on both sides you can begin to assemble the salad by placing a layer of fennel on the bottom of a salad plate, Then a layer of orange slices followed by a sprinkle of the chopped chives a few drops of white balsamic vinegar, A drizzle of olive oil and a pinch of salt and pepper


This recipe can be used just as a starter by adding some slices of parma ham and shaved parmesan or just served beside a grilled pork cutlet
