A delicious, easy dessert with biscuit and vanilla custard topped with a passion fruit icing
Place the lattice biscuits face down in a rectangular dish.
Mix the Cottees Vanilla pudding mix, milk, cream and 1 tsp of vanilla essence. Whisk together and place in the fridge to set for 10 minutes.
Prepare the icing mixture in a separate bowl - mix icing sugar and passion fruit together until you achieve a thick, runny consistency.
Get thickened custard mix out of the fridge and spread over the biscuit base.
Place the remaining lattice biscuits shiny side up on top of the sustard mix.
Pour over and spread evenly the passionfruit icing.
Allow to set in fridge overnight for ideal eating.
