Lamb & Vegetable Stir Fry

Enjoy the colours that represent the incredible healthiness of the dish.

Ingredients

  • 160 grams lamb, trimmed of any fat

  • 1 small onion – diced

  • 2 cloves garlic – thinly sliced

  • 1 carrot- thinly sliced

  • ½ corn cob – corn removed

  • 1 medium zucchini – thinly sliced

  • ½ cup broccoli – cut into small florets

  • Cracked pepper

  • Sea salt

  • Extra virgin olive oil

  • 50 ml water

Method

  • 1.

    Season the lamb with a sprinkle of cracked pepper and sea salt.

  • 2.

    Place lamb under the grill and grill for 5 minutes, turn the grill for another 5 minutes. Turn the grill off and allow the lamb to rest for 5 minutes.

  • 3.

    By allowing meat to rest before serving it will ensure that it is tender.

  • 4.

    Place garlic and onion in a large pan with olive oil and sauté until clear.

  • 5.

    Add all vegetables, water and cook for 4 minutes, stirring often.

  • 6.

    Place lamb on plate with stir fried vegetables and enjoy the colours that represent the incredible healthiness of the dish.
