Scrambled Tofu with Tomatoes, Mushrooms and Fresh Herbs


  • 100 grams silken tofu

  • ½ tomato diced

  • ¼ red onion

  • 5 button mushrooms

  • 1 celery stick

  • Small hand full of fresh basil & continental parsley


  • 1.

    Cut red onion and celery and mushrooms into small pieces.

  • 2.

    Heat a pan to a medium heat, add onion and celery and allow to cook for 1 minute.

  • 3.

    Add tofu, tomatoes and herbs and stir for 2 3 minutes, allow to rest for 1 minute in the pan then serve.
