A risotto dish with healthy benefits.
Heat oil and cook onion and garlic until soft.
Add barley and mushroom and cook, stirring constantly for 3-4 minutes.
Add remaining ingredients. Cover and cook for 1 hour on medium heat. Stir occasionally and add a small amount of stock/water if needed.
Serve topped with parmesan to taste.
Variation: Stir-fry diced chicken breast and mix through just prior to serving. :
