A risotto dish with healthy benefits.


  • 1 tablespoon olive oil

  • 1 medium onion, chopped

  • 1 clove garlic, crushed

  • 1.5 cups (250g) pearl barley

  • 2 medium zucchini, diced

  • 1 red capsicum, diced

  • 1 cup diced mushrooms

  • 1 zucchini, diced

  • 1 cup of mushrooms blended in your magic mixer

  • 3 cups chicken stock

  • 1 teaspoon dried oregano

  • Freshly grated parmesan (optional)


  • 1.

    Heat oil and cook onion and garlic until soft.

  • 2.

    Add barley and mushroom and cook, stirring constantly for 3-4 minutes.

  • 3.

    Add remaining ingredients. Cover and cook for 1 hour on medium heat. Stir occasionally and add a small amount of stock/water if needed.

  • 4.

    Serve topped with parmesan to taste.

  • Variation: Stir-fry diced chicken breast and mix through just prior to serving. :

How many does this serve?

Your recipes would be all the more enticing if you had pictures of the dishes.
