A delicious, healthy pancake stack to kickstart your day.


  • 2-3 tbsp fine, stone ground spelt flour

  • 1 tbsp sugar

  • 2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1/2 tsp cinnamon

  • 1 beaten egg

  • 1 cup almond milk

  • 2 Tbsp olive oil

  • 1 tsp vanilla

  • 1/2 banana

  • 4 strawberries

  • 1 teaspoon of honey


  • 1.

    Combine the flour, sugar, baking powder, baking soda, salt & cinnamon.

  • 2.

    Make a well in centre of flour mixture; set aside.

  • 3.

    Combine the egg, buttermilk and oil.

  • 4.

    Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy).

  • 5.

    Add additional milk to thin batter if necessary.

  • 6.

    For standard-size pancakes, pour or spread batter into a 3-inch circle on a hot, lightly greased griddle or heavy skillet.

  • 7.

    Cook over medium heat about 2 minutes on each side or until pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry.

  • 8.

    Serve warm with chopped banana and strawberries, add yoghurt on top and a drizzle of honey

Should spelt flour quantity be 2-3 cups rather than tablespoons?

Yeah must be cups, the mixture is just water otherwise
