Scrambled Silken Tofu with Vegetables

Start the day with this healthy breakfast meal.


  • 100g silken tofu

  • 1/2 a tomato diced

  • 1/4 red onion,

  • 1 hand full of English spinach

  • 1 celery stick


  • 1.

    Cut red onion and celery into small pieces.

  • 2.

    Heat a pan to a medium heat, add onion and celery and allow to cook for 1 minute.

  • 3.

    Add tofu, tomatoes and spinach and stir for 2 3 minutes, allow to rest for 1 minute in the pan then serve.
