Snapper with oven Roasted Pumpkin and Zucchini

A roast dinner with a healthy twist.


  • 1 zucchini cut in 5 pieces

  • 5 x 3cm cubes of peeled pumpkin

  • 200g piece of snapper with the skin on


  • 1.

    Pre heat oven to 200, place pumpkin in a baking tray and put in oven for 15 minutes, add zucchini and bake for a further 15 minutes.

  • 2.

    Score (cut) the snapper skin into a grid approx 3x3cm.

  • 3.

    Heat a non stick pan to medium heat and place the fish skin down.

  • 4.

    Cook on this side for 4 minutes, turn the snapper and cook for a further 2 minutes.

  • 5.

    Allow to rest for 2 minutes before serving.
