Treat yourself to this healthy, simple and delicious soup.


  • 1 tbs oil

  • 2 cloves garlic

  • 1 onion sliced

  • 1 cup red lentils

  • 5 cups water

  • 2 stock cubes

  • 1-2 tspn tomato paste

  • 1 tspn dried thyme

  • 1 tspn cumin seeds

  • ½ tspn cumin powder

  • 1 tspn whole black peppercorns

  • Squeeze lemon

  • Salt or tamari to taste

  • Fresh coriander – garnish or in dish


  • 1.

    Fry spices then add other ingredients.

  • 2.

    Cook until soft then blend in a food processor.

I double the recipe except for the peppercorns, and I use heaped tsps. of spices instead of level tsps. I add 2 large peeled Potatoes,3 or 4 large carrots, and 1 extra large peeled sweet Potato all chopped in large dice, so that when you use the hand blender, you are still left with large pieces of vegetables. Enough for a family of five with plenty leftover to freeze.

Love this recipe! Is quick and delicious. Kept the basics.... but made slight: replaced fresh lentils with 2 cans, added: a carrot, fresh corn, paprika, left out: lemon juice and cumin seeds. Did not blended either as i love chunky soups :)

I love this recipe. :) Delicious and ready in minutes. Kept the basics...replaced fresh lentils with 2 400g cans rinsed, added a sliced carrot, fresh corn and left out the lemon juice and the extra salt. Also did not blend it, but I like chunky soups :)

Best recipe! I added 1 small potato and half a sweet potato too. I didn't have lemon juice either so I left this out. I also left out tamari/salt. I found there was heaps of flavour as is. I will definitely make this one again!!
