Marinated Chicken Breast Skewers with a delicious thick satay sauce. Healthy quick and easy meal full of flavour.
Cut the chicken breast pieces into 2-3cm wide strips lenghtways.
Marinate the chicken- place the chicken strips into a large bowl. Add the tumeric, chilli paste, ginger, garlic, soy sauce, 1 tbsp peanut oil and only 1/2 tsp curry powder. mix through well with hand coating all the chicken pieces and leave to sit for 5-10 minutes in the fridge.
Prepare the sauce - Place your pot on medium heat. Add the coconut cream, sweet chilli sauce, peanut butter, 1 tbsp peanut oil, 1/2 tsp curry powder. Stir until combined and turn down to very low heat stiring occasionally.
Take the marinated chicken out of the fridge and place a skewer stick through each piece to form your skewers. Heat a pan and coat well in peanut oil. Fry the chicken skewers in the pan in batches until all fully cooked.
Stir satay sauce and remove from pot into serving pourer jug.
Tastes great served on jasmine rice with a side of steamed or boiled greens (brocollini, asparagus, cabbage, etc). Also great for an Appetiser.
