Great for BBQ's!
Combine all of the above ingredients and mix well so they are well incorporated.
Taste and adjust accordingly.
This amount is good for a couple of lamb racks.
For a whole boned leg of lamb you will probably want to double the ingredients.
Put lamb racks or leg of lamb in a large sealable zip lock plastic bag, pour over marinade and seal bag.
Give it a good rub massaging the meat in the bag so that the marinade gets into all of the nooks and crannies.
Leave for 1 – 3 days.
Cook on the BBQ over direct heat until the meat is burnt to your desired level.
