Byron Bays take on Guacamole with delicious ingredients.
Bake jalapenos on salt in the oven until cooked.
Also bake some whole bulbs of garlic but not on the salt.
Peel and deseed the jalapeno then chop.
Squeeze out the garlic and place in a bowl with the jalapeno.
Mix through the chopped avocado and then dress with lemon juice and season with salt and pepper.
Serve with corn chips
