This is a great dessert to try with friends.

  • 5 oranges, peeled, cored and quartered

  • Fresh mint finely sliced plus some whole leaves

  • Pinch Cardamom powder

  • ½ tsp Cinnamon powder

  • One cinnamon stick

  • 2 whole cloves

  • 200g of raw Sugar

  • 200 ml of water

  • Grand Marnier

  • 1.

Make a sugar syrup by combining the sugar and the water and heating over a flame until the sugar has melted then bring to a simmer and cook for several minutes.

  • 2.

Turn off the flame and allow the syrup to cool.

  • 3.

Once cool put in the spices and mint and whisk to combine then put in the orange pieces and mix again.

  • 4.

Allow to steep for a couple of hours.

  • 5.

Remove orange pieces and stack about six to eight pieces on a plate.

  • 6.

Then take a ladle, pour in some Grand Marnier and hold over a flame gently heating the liquor. It will eventually light and begin to burn when this happens pour over the oranges and watch as they “flame”.

  • 7.

    Serve with vanilla ice cream.
