Using crunchy tortilla chips and colourful vegetables in this recipe make it a great tasting brunch option.


  • Tortillas-2 sliced into thin strips

  • Eggs-4

  • Onion-1 chopped

  • Tomato-1 chopped

  • Capsicum- ½ chopped

  • Salt to taste

  • Pepper to taste

  • Oil-1 tblspn


  • 1.

    Beat egg with some salt and pepper and set aside.

  • 2.

    In a frying pan add oil and fry the thinly sliced tortilla pieces till crispy.Remove it and set aside.

  • 3.

    Now heat oil again in that pan and fry onion,capsicum,tomatoes for 1 min.

  • 4.

    Add in the eggs and scramble slightly.Add in the fried tortilla pieces when it is still gooey and runny..Mix well..

  • 5.

    Tip this in to a plate and enjoy..
