A simple and easy to follow recipe for individual sticky date puddings.


  • 12 dates, finely chopped

  • 1/4 cup water

  • 24 gms butter

  • 3 tbsp caster sugar

  • 4 tbsp SR flour

  • 1 egg, lightly beaten

  • pinch of bicarbonate soda


  • 1.

    Turn oven onto 180˚C.

  • 2.

    Collect ingredients and take out utensils.

  • 3.

    Chop dates and combine water in a glass bowl.

  • 4.

    Cover bowl tightly with glad wrap and microwave for 45 seconds.

  • 5.

    Carefully take off glad wrap, add a pinch of bicarbonate soda and let the mixture cool.

  • 6.

    In a glass bowl melt butter in microwave, add caster sugar and mix well.

  • 7.

    Add lightly beaten egg and mix through.

  • 8.

    Fold in SR flour and the date mixture.

  • 9.

    Place mixture in greased muffin tin and bake for 20 minutes.

  • 10.

    Serve and enjoy.

  • 11.

    Clean up.

Try and finely chop the dates otherwise you can get big chunks in the puddings and its not very nice.
If you are serving these puddings they taste good with little side extras like toffie, mint leaves, cream, caremal sauce or fanned strawberries.
The cooking time of the puddings may vary depending on how old/new your oven is, eg. Mine is an old oven so things take longer to cook because heat ecapes.
